It was lactose intolerance! I was also having this happen to me, along with choking on liquids and food.
You can search the internet ask doctors and I bet you will likely have a hard time finding any info about lactose intolerance making people choke on their own saliva, but it was exactly this for me. It does many other things to me that the doctors seem unaware it can cause, but this is related to muscles. Lactose intolerance effects my muscles therefor effecting the muscles when swallowing. I had testing done (motility test and many more)to rule out other things and they came back normal. Since living with lactose intolerance for 8 years now I can definitely confirm dairy makes me choke on my saliva! It almost feels like or reminds me how a person with asthma coughs with a minor attack or at the end of one.
