Unfortunately customer service everywhere is poor now. Staff have little product knowledge or pride in their work and businesses couldn’t care less whether they make a sale or not. Staff are not properly trained and don’t understand customer needs. When I was in the auto trade we used to bend over backwards to attract and keep repeat customers for generations, that was how we stayed in business. Back then one’s ability to interact with and help customers was a key asset for employees and desirable for employer’s.

Sounds like you're more frustrated in you or staff at new store not knowing how to get the old one off first.  
 
What is the older faucet? Maybe someone here can help.

There is likely a large nut below each tap handle on the underside of the sink that holds the tap set to the sink. Once those are undone the faucet set should lift off.  
 
You need to undo the nuts that hold the hot and cold water lines to each side first though. Don't forget to turn off the water before you do anything.

Honestly, if it's the big box hardware stores in Brandon, I wouldn't put it on every single staff to know about every single type of DIY and repair issue.  
I mean, honestly, if you were a single person getting paid $11.95 to work at a corporate hardware store and constantly had to choose between what bills to pay each month or how many days you could go without food, I wouldn't be trying to know everything there is to know about electrical, lumber, plumbing etc.  
 
You want great customer service and knowledgeable staff? These companies have to pay them a living wage and train them so they want to learn and are looking forward to coming to work, not always thinking about their life off the job constantly being stressed and worried about their next meal or overdue bills.

What is that? You walk into the store to shop. You pick up your item or items. You go to the checkout. You scan your items you pack your items. You walk out of the store. Hmmm customer service ha ha. You got great customer service as you did everything. Even before people had minimum wage jobs but you still had great customer service. There is very little customer service anymore. Just look at some of the businesses there is no customer service desks or if there is a service desk no one is standing at it.

There might be a small rubber cap or some kind of cap somewhere on the tap that covers the small screw that holds the tap on. Or maybe the handle unscrews in different spots.

I can't help you with your customer service problem, except maybe point out maybe the poor staff has worked there for only a few days and doesn't know the 10s to 100s of thousands of products carried in a typical store yet. Depending on the store, do you really expect people knowledgable in this sort of stuff to be working retail for min or near min wage?  
 
Here's a website that has a tap that looks somewhat similar to your handle design. You might have already looked at it if you've been googling. Yes if I enter a store I expect the staff to be knowledgeable about their product. It is not an unreasonable expectation. It is the employers responsibility to ensure staff are properly trained. It is the employees responsibility to be self motivated and helpful. Without this how can the consumer make informed choices? There is absolutely no excuse.

K first off the picture you showed was great help to a plumber or handyman. Yes the way to remove is from underside of the counter. You have to shut water off if your have shutoffs on each line, if not shut the water off too the house. Then remove the supplies line and remove the nuts holding it in place.  
As for customer service they should be able to tell you about the product they sell, but may not be able to tell you how to renovate for house.. they aren’t training in plumbing or electrical or carpentry they work at a hardware store. That like asking the guy pumping gas on how to change the spark plugs on your car. They aren’t training in that trade.

If there were a screw on the top all that would do is allow the handle to come off. Every faucet set I've had (and all looked similar to yours)-even the ones with screws on top-had to have the big nut removed from under the countertop. Hate that job-some are rusted on and do not come off easily. I leave that job to a plumber and in some cases even he can have trouble getting the old faucet removed .

You'll need a faucet wrench to reach up behind the sink. This video shows how they work.

If you want expert knowledge on plumbing equipment, don't expect it from a big box store. If you go to a retail store that sells thousands of products, and staffed by people making minimum wage, you will have to temper your expectations. Would you expect an employee at Superstore or Walmart to tell you the nutritional value of their grapes?  
 
If you want expert advice, you will have to go to a place like Crane Supply, EMCO, Wolseley, or Robinson supply. There you will find actual trades people who actually are knowledgeable. But expecting to get expert advice from a retail store like Home Depot or Canadian tire is a fruitless endeavor. And, the last time I checked, they don't require their employees to be certified in anything other than stocking shelves, and they are paid as such.

A lot of stores tell people working for them not to help or give advice. As it could lead to a liability issue. But it does suck when they don’t even know where to find things at all

I worked at Superstore, and every employee was encouraged to ask customers that are within the same aisle to ask if they need any help.  
 
If a retailer has this as part of their service, I would certainly question their motives.

Did they expect you to help the customer find the aisle with the printer cartridge, or did they expect you to be able to direct the customer to the printer cartridge, and then also to be able to explain why their printer isn't printing even with the last new cartridge they bought....and then you would tell them step by step how to fix it? Did you talk the customer through the proper method to cook a beef roast? How to prepare a Full Christmas di nner when you directed someone to the turkeys ? I'm sure most store clerks can direct someone to the faucet section. That is the extent of their job.

I believe the picture to be one set in the Taymor brand line. If no screw is in handle it lifts off (pull straight up on handle) as is held by spring clip, allowing access to replaceable cartrage if available.

Search Caledonia line for replacement parts diagram 06-8701L / 06-8701LSN may be similar, may help with disassembly.
