WTF is with mid-week price changes?!??

I am getting so frusterated with trying to plan grocery shopping trips. When I go to some un named grocery chain I find that their prices change sometimes as frequently as day to day. AAARRRGGGHHH!!!***shaking fist***
The brilliant explanation that a staffer gave me was that if they are price matching a competitor and the sale is over they will bump the price back up. But what store has sales change on WEDNESDAYS????
Okay, I get the whole supply and demand and fluctuating produce cost theroy. But to jack an item up from $6.99 to almost $11.00 over night, mid week is madness. There were at least 5 items that went up in price overnight and it totally influenced my purchase decisions (deciding to not purchase the higher priced items). If you are going to offer a deal-please lock in the price until your new flyer week starts.Please?
