Does anyone know where I can get at least a 1/2 c. of fresh (not canned/in a jar) horseradish root in Brandon or Winnipeg? I dug some up this fall, but not enough for what I need and now, of course, the ground is frozen.

First it takes a lot more cold weather then we have had to freeze the ground. Try digging you might be surprised.  
 
Second horseradish is very hard to keep fresh. Once the root is broken the plant immediately starts reacting with the air. It basically burns itself up. It can be kept temporarily if submerged in vinegar but it effects the taste when stored this way. Roots are bigger then typical jars (several feet long) so to keep an entire root unbroken in a jar is totally impractical. The best way to keep it is to process it into a sauce immediately once its harvested otherwise its ruined.

Andy, where my horseradish source is, the ground will be frozen. It is north of Brandon by quite a ways. It gets colder there sooner and the ground will have frozen there already. Even where I live (which is not in Brandon), some areas of ground have frozen, other areas not.  
 
So...then the question I will pose to you (and others) is...if the ground is not yet frozen in Brandon, do you have a source where I could dig some up? I will most likely be in within a week. Again, I don't need much.

Superstore shows that they have it via Click & Collect so they should have it in store. It's a really bad picture! LOL

The horseradish at Superstore all seems to be prepared. For what I am using it for, that won't work.  
 
I will have to try by Princess Auto, I guess. I will feel a bit goofy digging there, but even so, I can't see anyone caring. I wonder how easy it will be to locate after all of this snow is done?

Hobbes, I did cluck on the link, but no fresh root appeared. I wonder why? Interesting.  
 
Hammerhead, I would be very grateful. Is it in the ground or do you have it already dug up? It will be a little while until I get to Brandon. If it is already dug up, I read that it keeps for a time in the fridge or alternately it can be tightly wrapped then frozen. That could keep it good until I come in.

I just dug it up, the ground isn't frozen where the leaves of the plant are.

Hammerhead, if you can wash it off and wrap it tightly and put it into the freezer, that should keep it until I come in. I read that vacuum packing is best, but a tight wrap in plastic wrap and put in a freezer bag should be enough.
