PLEASE HELP ME....ideas for a Surprise party

I am planning a surprise B'day for my Spouse. I cant afford no more than $300 and between his work, his friends and Family, there could be at least 100 ppl!!
Where should I book?
what food should I prep?
and how much does a DJ cost??
Hotels are good and they cater within their areas. Does anyone have an idea on that?
Halls are good too but you have to buy all the alcohol yourself plus pay the DJ and pay for hall. Whereas hotels like the Vic Inn..... they put all that cost under one bill.
Am I correct?
PLEASE...help with your ideas!!
