I would call or visit your local conservation office, you should be able to find the number if you Google "Manitoba Conservation [your town]".

No you can not trap and eat the rabbits.

Just by some snare wire and set some snares along some rabbit trails. You'll get a pile.

You do not need a trappers licence. Licenses are not required to hunt small mammals such as hares, rabbits and gray squirrels.

the Mb Con site says you don't need a license to hunt rabbits hares, grey squirrels etx as opposed to fur bearing animals. and there is not restriction on the type of gun you use.  
 
but if you are trapping, what happens if you inadvertently trap a fur bearing animal that you need a license for ? or conservation sees your trap and calls attention to it.  
 
i would call conservation to clarify all the what if's  
 
I remember a guy in sk picked a road killed fox for the pelt, it was still in good shape and obvious it was road kill. got stopped by conservation and charged for possession of a fur bearing animal with out proper license. even though it was road kill.

Accidental Fur Bearing Animal Capture Policy  
 
Occasionally, a fur bearing animal will be taken accidentally ex: outside the open season. A trapper may apply for a Possession of Dead Wild Animal Permit (cost of $10.00 for a fur bearing animal) from Manitoba Conservation and Water Stewardship as soon as possible after capture. All permits are issued at the discretion of a Natural Resource Officer. All other accidental captures of the same species by the same trapper must be turned over to the nearest Manitoba Conservation and Water Stewardship office and will remain the property of the Crown. The exception is black bear: Open Area trappers are not allowed to keep a black bear taken accidentally (except in Northern Special Trapping Districts)

You can shoot and snare rabbits anytime of the year but not in city limits,I snare or shoot rabbits in the fall and winter
