Are they shutting down Houstons to make it a pancake house.

I was excited when I heard that. Bars are kinda dying, so I didn't think it was that far fetched.

Until Genesis Hospitality says otherwise I would treat this just as a rumour.  
 
That being said, it would not surprise me at all that with the changeover to the Clarion brand at the hotel that there may be pressure from Choice hotels to not have a busy bar on the premises. I could see a long term plan to renovate/expand the Imperial Ballroom space back into a bar and a Houston's relocation to the Vic Inn. The thing I've learned about these sorts of rumours through the years is that they are very seldom true... until they are.  
 
Don't hold you breath though. My guess is that for now your Pancake House location is conveniently located in Winnipeg.
