I love this easy whipped shortbread as well. Its tried and true.
WHIPPED SHORTBREAD
1 cup butter, soft
1 1/2 cups all purpose flour
1/2 cup icing sugar
1 tsp. Vanilla extract
Maraschino cherries

Preheat oven to 350F
In a mixing bowl combine butter, flour, icing sugar and vanilla. Beat with electric mixer until its a light, smooth consistency.I have whipped the batter for up to 10 minutes, but they survive with less.
Line cookie sheets with parchment paper.
Drop by teaspoonfuls (smaller cookies) or Tablespoonfuls (larger cookies) about 2" apart.
Cut maraschino cherries into halves or quarters and put cherry pieces into the middle of the cookies.If you don't like cherries, use a Hershey's kiss. I like traditional cherries.
Bake in 350F oven 11-15 minutes or until bottoms are lightly browned.Just watch them around the 10 minute mark..depends on your own oven and how large your cookies are..just don't overbake these.
Remove and let cool for 5 minutes and transfer to wire rack to finish cooling.
Store in container separating each layer with wax/parchment paper or freeze them in airtight Ziploc bags..
*Note: Almond extract can be used in place of vanilla for a different flavour.
