Question about accepting cheques for bigger ticket items...

This weekend I have a booth at the local craft sale. This is the first time that I have experience in a larger centre (both sale size and community size). As I have a few bigger ticket items I am wondering what most people do when offered a cheque. In small town Manitoba I have not had any problems (touch wood) but they have been the basic $20 range ... this time I have an item worth a few hundred dollars. What can I do to protect myself?
Any suggestions would be greatly appreciated.
