It will work that way.
I had a car that got flooded in a large rain storm once and I used multiple pantyhose full of cat litter to dry it out. It did dry it out where it was physically touching the carpet, but does not pull surrounding moisture out. Nor did it do anything for the musty smell.
What did work for the musty smell was whole coffee beans in the same panty hose (though you don't need that much). I have used coffee beans to get cigarette smells out of cupboards and an old truck.
If you are worried about moisture causing must and mold, I think your best bet are those desiccant pebbles. Not sure where you would find them in bulk - I bet Michaels would have them as people use them to dry flowers.
