I have so many things to make. The list is very long. Glazed sugar cookies, nanaimo bars, raisin tarts, cheesecake cups, gingersnaps, peanut butter balls, pinwheels, shortbread, haystacks, thimble cookies, nuts & bolts?, & maybe popcorn balls to hang from the tree. Maybe more? We'll see. Some of these will be for gifts.
Here is a good gingerbread cookie recipe passed down from my grandma:
3/4 c. lard/shortening/butter
2 c. white sugar (less works well)
2 eggs
1/2 c. mild molasses
2 tsp. vinegar
3 c. flour
1 1/2 tsp. baking soda
2 tsp. ginger
Dash of cinnamon & cloves (very small dash)
Dash of cayenne for bite (very small dash)
Mix first 5 ingredients, then add sifted dry ingredients. Roll into balls & press with a cup or glass that has been put in white sugar. Bake at 350*F for 8 minutes (soft) or 10 minutes (crunchy).
