We have had a really busy month with little time between work and activities, I would end up making something big on Sunday and using leftovers for a few days, lasagna, enchiladas, pasta salad, roasts, pulled pork etc. If I made meat I would then I would make different things with them during the week, such as wraps, quesadillas, sandwiches, or throw it in some pasta or rice. I sometimes make a big batch of soup also.
