Freezing cabbage rolls and buckwheat for cabbage rolls...

Looking for some tips from an expert here..
So, I want to make rice cabbage rolls and freeze them, is it best to freeze before or after roasting? Also where can I find buckwheat for cabbage rolls and what is the best way of cooking/freezing those as well?
