I'm wondering if there is a cooking class available somewhere in Brandon. I would be interested in an evening class.

They may have what you are looking for in their Continuing Education programs.

Not sure if this is up your alley or not, but just received a PSA about a class that Healthy Brandon is putting on in September called "cooking in batches"...
