I am going to make baking tins this year for a few people. Just looking for ideas of what I could bake to put in these?

Tarts usually travel well in those tins, as long as you wax paper in between.  
 
I usually do very unique things in my tins - like sugar plums - no one makes those anymore so they are a novelty.  
 
Ginger snap cookies are always a hit too.  
 
What I find is keep the decorations to a minimum as they just get all over the place in the tins (ie - don't use powdered sugar )  
 
I also usually fill the tin with foil wrapped candies or chocolates too.

Be careful with the gingersnaps...not everyone likes them. They will flavor other treats around them.  
 
Know the tastes of your recipients.

My favorite!  
Also, rum balls. (but same as gingerbread, an aquired taste that not everyone likes).  
Most people including kids like the good old peanut butter marshmallow squares.

This little treat bags from a dollar store to wrap my different cookies in sometimes (and still put them in the tin) - like someone else mentioned, some things people hate and having them in the same tin can be gross to them.  
 
I also like to do pretty "barks" with all the different colours of melting chocolates out there. Basically just toss some mixed nuts of your choosing in some salt and a bit of cayenne pepper (yes, cayenne - if you do not go overboard, it can be really interesting), roast them on a cookie sheet, then melt some various colours of chocolate and drizzle away on the same cookie sheet (after the nuts have cooled). Let cool and break into bite sized pieces. Wrap in the little baggies and give away.....

Chocolate dipped pretzel rods. Decorate however you like!!  
 
Nuts and bolts...1.5 cups melted butter with 1.5 tsp's each of garlic powder, celery salt and worchestire(sp??) sauce poured over a large roaster of Hawkins cheezies, bugles, pretzels, peanuts, cashews, shreddies, Cheerios, goldfish, cook at 250F for 2 hours, mixing every 30 mins.

shortage of butter - walmart has been out for more then a week.  
 
Colored mini marshmallows -I could not find them.  
 
Butterscotch chips - hard to find!

Did you try bulk barn for butterscotch chips? they usually are stocked well. I made my nuts & bolts today. I am also going to make sugar cookies, pecan tassies, chocolate nut clusters, candied nuts, caramel corn, tv roll, peanut butter marshmallow squares, and shortbread. All are great to fill baking tins for Christmas.  

Last week bought colored mini marshmallows, butter, and butterscotch choirs. There were lots

this year I've only made Naniamo bars, nuts and bolts, and pretzel caramel bark. Other favourites have been lemon bars, peanut butter chocolate truffles, Oreo truffles, sugar cookies and molasses cookies.

My list of favorites every year to do is. Sugar cookies, peanut butter squares, haystacks, peppermint white chocolate cookies, shortbread jams, reindeer chow, and cream cheese nut roll cookies.

for my Butter Tart slice, whipped shortbread, and Magic Bar slice, it's expensive and hard to find. Walmart has been out for over a week, yesterday they finally had some unsalted. Can't imagine paying $5, or more for a lb of butter, baking is going to be expensive this year.

I stock up BIG TIME when I hit the US and freeze it.  
 
I love the way theirs comes in the convenient sticks instead of the blocks. But my freezer stash is nearly out - time to go southside again I think....

While we're on the topic, where can I buy the tins to put the baked goods in?? I'm on a budget, so I don't want to be spending too much per tin! Also how can I keep the baked goods fresh longer? I'm thinking of baking shortbread cookies, and some pretzel dainties. TIA!

or the other dollar stores but their stock might be running short.

Had lots of tins last week

I see people are doing a lot of baking with nuts. Just remember if you're giving away baking tins as gifts, please DO NOT mix baking with nuts in with non-nut baking. You never know if someone is allergic to any kind of nut. Even if you think it's ok in the same tin but on a different level, it still may cause an allergic reaction. I learned I was allergic to a lot more than just peanuts that way!
