The best potatoes for an awesome poutine are Yukon gold or Russetts. Red Potatoes are too starchy and sweet for me.
Plus zero is correct about curds, you'll have to go to the cheese factory to get it "squeak squeak" fresh. As for gravy, Quebec's St Hubert sells cans of their popular poutine sauce at grocery stores all over town. If you know a Hutterite colony that makes fresh cheese, you'll be able to find curds there as well.
Shredded cheese doesn't belong on a poutine, with the right curds it will be slightly gooey, very stringy and have a balloon-like squeak to it. Shredded cheese doesn't add anything to the taste unless if you drench it in cheese
