I need help finding deli meats (prosciutto,salami) and cheese (brie, gouda) in large portions.. I've called the grocery store delis and they don't sell the giant rounds of cheeses or the whole tubes of salami as I thought they might. Has anyone seen these in Brandon or Winnipeg? I'm thinking Costco may have some variety but maybe not.

Superstore didn't have any? What about asking the meat department at whatever grocery store you already shop at?  
 
Costco will have some of that but I think your best bet will be the real Canadian wholesale, near polo park. I'm blanking on the street. Off Ellice maybe? It's free membership to shop there but you'll need to sign up when you get there

I called Superstore, Sobeys, Co-op, Safeway and they don't sell the whole slab/tube of meat. I think they might have the round of brie but not gouda. Yes, I'm going to get my sister to check Canadian Wholesale for me! I didn't think it would so hard to find. I also am trying to get ahold of another butcher shop in town. One of them said they can probably do that but couldn't give a cost for a giant chunk. Argh. I also was wondering if there are any Hutterite colonies that may do that kind of thing.

I doubt if you'll find much locally made prosciutto, that is if your looking at authentic prosciutto, can take up to a year for it to cure properly.  
Seems to be getting harder to buy larger deli meat products, even square tubes of ham for making sandwiches are almost noexistant.
