There's lots on the market that's just cabbage & salt, but yes, to be sold in stores it needs to be pasturized I'm pretty sure. Can it even be sold at farmer's markets? That would probably be the OP's best bet.
Sauerkraut is a living & fermented food, but it's relatively easy to make yourself with just a few basic tools. Just try googling "sauerkraut by the jar". Alternatively, the OP might get good results with their digestive products consuming other fermented foods.
