How long after having kids did you get hold on to baby stuff (ex: high chair, exersaucer, outgrown clothes, etc.)?

Depends on the items. I have been able to pass some items along to other family members that I knew they would get good use out of. Some of our more sentimental items like the bassinet, I will keep, and maybe pass it on to a grandchild someday. Our crib converted in to a bed, so that's how we dealt with that, and our change table was a dresser, so again, no need to get rid of it.  
As for clothing, I kept a few special items that I will hopefully pass along to grandkids. Other clothing items I just donate or give away to family once our youngest is done with them. If clothing is worn out or stained badly, it either gets cut up in to rags or thrown out.

Another thing to keep in mind is to store certain items if you might possibly have more children in the near future. It can save you some money to hold on to the best items (clothing & furniture) if you have the space. Sometimes you can repurpose furniture in the interim.
