These would be some of my suggestions
St Johns has the reversing falls, kind of cool
Moncton - assuming you are checking out the Hopewell Rocks - loves it there! Magnetic Hill is neat too, some good shops and places to eat there.
Nova Scotia/New Brunswick
Grand Pres is interesting with the Acadian history, it is a national parks site
Wolfville was a neat town, lots of little shops and a pile of great restaurants- it was really hard to decide where to eat. The is where Acadia University is.
There was a great spot that we stopped that had a little market and a lobster shack - Masstown Market
In Halifax I would recommend Pier 21 for a tour and then right by it is the Halifax Farmers Market. There’s also a cool brewery pub right there too.
You have to go to Peggys Cove, absolutely stunning and so maritimes
I really enjoyed our walking tour of downtown Halifax, very interesting history
