I want to spend a week backpacking and camping but have little experience. I'm wondering where I could do this in Manitoba or Saskatchewan. Maybe someone would want to come along? I'm thinking spring or early summer as I have to accumulate needed gear but just wanted to get started planning now.

Try out the national and provincial parks. Riding mountain has lots of trails.

Look them up on facebook and give them a call. Northern Saskatewans gorgeous lakes and forrest. This company will guide you on adventures of a life time! They not only build their own canoes but also have a store Montreal River Outpost (also on fb)where you can rent (or buy)canoes or kayaks or paddle boards. You can leave on the lake from the store of they can pack you and friends up with or without canoe and drop you off for some of the best hiking or lake canoeing surrounded by beauty and islands to explore. The sound of loons on the lake... They can also arrange with you to pick you up at a certain pre planned destination. They sell camping supplies and all!  
I can not say enough great things about Air Ronge Saskatewan. Trip of a life time! I was there this summer and plan to go up there every summer from now on to enjoy the beauty and peace of it all.
