I still have 15 jars of relish from last year, LOL. I usually make it out of zucchini, and had bumper crops of zucchini last year, hence why I still have so much relish.
I've also canned anything I could that allowed either cucumbers or zucchini, and I'm refusing to make more pickles at this point. I've pickled cucumbers (2 ways), beans, random mixed veggies, beets... it will take us probably 2 years to eat what I've made so far this year! And I haven't even started saurkraut yet.
I'm waiting patiently for my tomatoes to ripen so I can make salsa (2 ways) and can the tomatoes (I've already made lots of things out of green tomatoes, including salsa verde). If only cucumber salsa was a thing....
