Attention all Bakers

O.K. I have a question.
I have a new recipe for a breakfast bar type thing. They are made with whole wheat flour, flax, oats, banana, apple sauce, etc. They are really good, but there is one big problem. They also have a full cup of coconut in them. My husband HATES coconut.
My question is this. Can anyone suggest something that I could substitute for the coconut. If this was a regular cookie or something I would simply change it, but I am afraid that if I change it too much I could cause some problems with the recipe and the whole thing could flop.
Do you think that I could use a nut (walnuts maybe) or dried fruit (apples, apricots, raisins)? Or should I just put in more oats instead??
Please help!
