I want to freeze zucchini? Preferably shredded and prepped to bake with. Do I need to do anything special with it? Online some say to blanch sliced zucchini first. Has anyone got some first hand experience with doing this? I want to shred it and freeze in two cup portions,

I just shred mine and freeze in 2 cup portions. It's quite watery when thawed so I just drain it. I've baked with it and thrown into pasta sauce

I also just grate mine and freeze in 2 cup portions as most recipes call for 2 cups.

Also, zucchini dries really well. Slice then, then dry in a oven or with a food dehydrator. Use in soups and stews.
