    Shortbread Cookies made with Rice Flour

    I am looking for a tried and true recipe for shortbread cookies made with rice flour. My old aunt used to make these, and of course the recipe died with her. I have googled a ton of recipes, and none seem quite right. The cookies were not sweet and melted in your mouth. Any cooks out there willing to share?

    a always made mine with the recipe on the back of corn starch, could you use that and sub rice flour, they taste as you describe

    Has a diabetic shortbread recipe that uses rice flour. I will try to ad a pic of the recipe. We make cookies with cookie cutters from this recipe and they always turn out great.
